Speaking of grilling, this looks awesome.
It’s been a while, so I leave you with this tid bit. Had some some chicken legs to cook and figured I would spice them up and BBQ them. Try this for a rub.
Tsp calypso seasoning
Tsp chili powder
Tbsp cumin
Tbsp Salish salt
Tbsp alaea salt
Tsp fresh cracked black pepper
It’s something to play with, it was good, but as always with cooking you can always tinker.

Dinner tonight: tomato and dijon mustard tartlets.
This was my first attempt at making rough puff pastry from scratch, as I’d run out of my stash in the freezer. It didn’t seem to difficult to do, except that as I wanted my dinner now, not after two hours of pastry sitting in the fridge, it went into the fast freeze for twenty minutes as I got the tomatoes sliced and tackled a mountain of washing up.
It came out of the oven tasty, but definitely more like a delicious kind of buttery biscuit base than any puff pastry I’ve ever seen. Will try to give it the allotted 2 hours in the fridge next time….
This fantastically easy recipe came from the mother of my french exchange, which is going back some fifteen years. Mme Renoit would just take some ready made puff pastry, carefully smear a spoonful of smooth dijon mustard over, and top it with lightly salted slices of tomato before baking. It tastes heavenly.
